You'll need:
250g dry pasta (penne or fusilli)
150 grams Pinkie's Farm Boursin cheese
Zest from 1 lemon, plus more for garnish
1 tbsp lemon juice
1/4 tsp chili flakes
Cherry tomatoes
1/4 tsp ground pepper
3/4 cup grated Parm
Salt and pepper to taste
Garnish with lemon zest, chili flakes, parm, basil leaves
Procedure:
1. Boil 250g dry pasta (penne or fusilli) until al dente in salted water according to package instructions. Save 1 cup of pasta water before draining.
2. While pasta is cooking, sauté cherry tomatoes in a saucepan until they burst. Add cooked pasta.
3. Add Pinkie’s Farm Boursin Cheese to the pasta.
4. Add the zest from 1 lemon, 1 tbsp lemon juice, 1/4 tsp chili flakes, 1/4 tsp ground pepper, and 3/4 cup grated Parmesan to the pasta.
5. Slowly stir the pasta and add the reserved pasta water little by little until a creamy sauce forms.
6. Season with salt and pepper to taste
7. Plate the pasta, and garnish with extra lemon zest, chili flakes, Parmesan, and fresh basil leaves.
