Making Homemade Cioppino in 7 Easy Steps

You'll need:

  • 3.5 cups chopped onion
  • 1 tbsp minced garlic
  • 1tsp dried fennel seeds
  • 1 container Swiss Inn Gourmet Deli's Tomato Sauce
  • 2 containers Swiss Inn Gourmet Deli's Prawn Stock
  • 1.5 cups dry white wine
  • Salt & pepper
  • 750g Alaskan cod
  • 500g large shrimp, peeled and deveined
  • 500g large sea scallops
  • 1 pack mussels
  • 3 tbsp minced fresh parsley
  • Garlic toast

Procedure:

1. Chop onions and garlic for the base.

2. Sauté onions in a pot until soft then add garlic and fennel seeds. Sauté for 3 min. 

3. Add 1 container of Swiss Inn Gourmet Deli All-Natural Tomato Sauce, 2 containers of Swiss Inn Gourmet Deli All-Natural Prawn Stock, 1.5 cups dry white wine, salt, and pepper. Bring to a boil, lower heat, and simmer for 30 minutes. Season to taste.

4. Add seafood from Pacific Bay in this order: 750g cod (or any white firm fish), 500g shrimp, 500g scallops, and 1 pack of mussels. DO NOT STIR. Cover the pot.

5. Simmer until the mussels open.

6. Pour into a bowl and garnish with fresh parsley.

7. Serve with garlic toast.
