You'll need:
3 tbsp unsalted butter
2 tbsp EVOO
3 cloves garlic, chopped
900g onions
2 containers Swiss Inn Gourmet Deli Chicken Stock
3 tsps cognac
Black pepper, 2 bay leaves, salt, dried thyme
Baguettes
Pinkie's Farm scamorza cheese
Procedure:
1. Prep ingredients: mince garlic and slice onions into half rounds.
2. Add Pinkie’s Farm unsalted butter and extra virgin olive oil to a pot. Sauté garlic until soft.
3. Add onions to the pot. Sauté over low heat until soft.
4. Add dried thyme, cover, and cook until onions are brown and caramelized (stir every 6 min).
5. Add 2 containers of Swiss Inn Gourmet Deli chicken stock, salt, pepper, bay leaves, and cognac. Simmer for 10 minutes. Taste and season.
6. Pour into a bowl, add sliced bread and grated Pinkie’s Farm Scamorza cheese on top.
7. Melt cheese under the broiler until golden.
